It is silly to say it's the recipe.
I say that it is sort of my way to fry chicken without batter.
It's a perfectly Ketogenic friendly fried chicken and it is delicious!
Crispy outside and juicy inside as you just expected in fried chicken.
I have tried this with other parts of chicken thighs works best.
Wings also works but I prefer juicy and meaty thigh. (Mr. love my chicken wings though.)
Remove the bone away from the meat or you can buy thigh without bone.
But the skin is essential.
Remove the excess moisture of the both sides thigh with kitchen towel if you want.
Melt lard in the pan and make sure the lard is hot! hot! hot! before put the thigh in.
It has to be piping hot but make sure the lard does not smoking.
Cover the pan with paper or anything without the moisture stays in the pan.
I normally leave it about 5 mins in skin side.
Turn over the thigh in skin side and sprinkle salt on the skin.
Make sure put the salt a little bit excessively.
Another side for 5 mins and turn it over to skin side again.
Fry the skin side again another 3 min.
And make sure sprinkle the salt in the meat side as well.
The colour of both sides are yellowish brown.
It is simple but taste is great.
It just like fried chicken from the shop but definitely healthy and it's without carb!
(I say it is far better than shop fried chicken.)
Cook same way with wings.
Mr. loves it and so do I.
Please, don't be afraid put plenty of salt in!!!
