LCHF Report & Meal on Jan 2017(2)

I have tried a couple of things in LCHF diet on January.

  • The first a proper cheating day.
  • Carb intake was increased by eating some fruits in the morning.
  • Counting the protein intake.

-No weight loss in January but my weight has been ups and downs in certain level.
-Cheating didn't affect the weight but I had a terrible headache on next day.
-Ups and downs in scales had been affected by the menstrual cycle as long as I concerned.

So, I ate some fruit which I love in the morning.
(Oh, I missed you...)

I have to control how much I eat a day.
The good thing was that my bowl movement worked very well.
The bad thing was that I want it more sweet things.

So, I tried my fruity morning week and I had to cut it back.
I just stuck with berries which has a lower carb and sugar in the nutrition.
But I don't mind... If you are my regular reader, you know I adore strawberries.

#Whelk

I love whelk.
It is sad that I can't find a fresh whelk in the supermarket or fish monger.
I found whelks in Chinese supermarket so I bought about 1kg.
It is a super simple to cook.

Leave the whelks in the salted water about 30 mins.

Cook it 10 mins in boiling water and remove the shell.

Toss it in a warm lemon butter and serve with sprinkle some parsley.

Or just simply serve it with lemon juice or vinegar and salt & pepper.

#Pork Belly

I can't emphasise enough that pork belly is a very good ingredient for Ketogenic diet. The nutrition ratio fat to protein is 8:2(raw) and 1.5:1(cooked).

You can always ask your butcher to have fattier part.

I cooked half of the pork in presser cooker. Click here for the recipe.

I have made a Korean style dipping sauce using Doenjang which is fermented soy bean (aka Korean miso) and dripping from the steamed cooked pork belly.

Nice and fatty steamed pork belly and Doenjang dipping sauce.
My Doenjang dipping sauce is a very similar taste with Ssamjang.

If you have only a little time to cook, fried pork belly is the solution.
Ask your butcher to slice the pork belly as thin as possible.
It only takes about 5-10mins to make dishes like below.

Lard fried pork belly with bean sprout and chive kimchi

Butter fried pork belly and egg with water cress

I have found frozen, peeled and halved avocado in Tesco. It doesn't taste as good as fresh one but if you make smoothie or cook with avocado it is a clever and convenience choice.

Salmon sashimi is too easy to overeating this at home so portion control is a very important for me.

Canned tuna and avocado mash roll.

Butter fried beef skirt, avocado mash, steamed broccoli and egg scramble.

Fat bomb butternut squash purée

Steam butternut squash.
Blend butternut squash when it is warm
Add coconut oil and cream and blend it.

Keep it in the fridge and consume within 4-5days.

Just before you, eat gently warm butternut squash purée and cream.

Salad with mozzarella cheese

Slow cooked beef rib broth with egg ribbon noodle

oven cooked Salmon and water cress.

Welsh rarebit

It is a good starter or brunch dish for LCHF diet without bread.
