Fatty Thai Green Curry

I do like Thai Green Curry.
It is not a while, I have started to cook it at home.
I thought it is a kinda traditional dish that I cannot cook at home properly.

One of the dearest friends who shared my collage life visited London for a couple of days and she visited my house for the dinner. We usually met in London Bridge area and we go to the little Thai restaurant where we went only after the exams for forgetting everything about the exam with painfully hot curry. The place has many memories so we go there when she comes to London. But I invited her in this occasion. And I made Thai green curry by myself. Thankfully, she loved it and we have shared many stories and laugh.

Anyway, I have named it 'Fatty Thai green curry' because the recipe has extra fat in it for LCHF diet.

I like prawn green curry so the main ingredient is prawn for my dish.
But you can choose any meat or fish whatever you want.

1-2 serving

25g butter
30g coconut oil
60g prawn
40g green curry paste
30g coconut milk
70ml water
Your choice of vegetables.

1. Lightly fry prawn in the butter in medium heat. Take out the prawn as soon as it turns pink.
2. Add coconut oil in the pan.
3. Pour the green curry paste when oil is hot and fry the paste.
4. Add cauliflower stir properly than add coconut milk and water.
5. When the cauliflower is cooked, add papers and pre-slightly-cooked prawn.

It is a simple to cook and it is a properly fatty.

Enjoy!
