Home made Christmas Syrup



Christmas is just a week away.
We have waited for this day a year!!
The winter festival season come again and again, and we always are pretty happy about it.

I love smell of winter and Christmas.
If there is no winter, we won't know about greatness of warmth and spices.


I do enjoy hot drinks such as coffee (obviously), tea and any hot drinks with alcohol.
It is easily addicted with hot winter drinks after the long walks, especially.

My christmas syrup is perfect for easy ans quick mulled drinks with or without alcohol.
It is sort of cheat but who cares? 
It is just enjoying what I love in easy way.



8-10 Clementines or 2-3 Oranges with 500g caster sugar 


I have preserving sugar so I used it.
Any kind of sugar is fine but caster sugar do the best job for the recipe.

Slice clemetines and remove the seeds.
Make sure sterilise glass bottle and starting with bottom from layer of sugar.

sugar -> clementine slices -> sugar -> clemetine slices and so on.








Leave sugar to melt about 2-3days.
Stir it or shake the bottle sometimes bring the bottom of sugars around.


After 2-3days later when sugar almost become syrup, add spices.
Add spice mix with star anise, vanilla pod and cinnamon stick.
(The spice mix is from Spice Mountain at Borough Market.)



And leave it for at least 3 days to infuse all spices into syrup.














I have made two bottle and used one bottle on the gammon at my Christmas dinner party earlier.

You can use it in many many recipes and I will post how I use it in my drinks and foods soon.
